Reese’s without the dairy? Reese’s with some extra protein? Reese’s but homemade in under an hour? Let’s do it! Here is my recipe for high protein peanut butter bites.
These chocolate peanut butter bites taste just like a Reese’s peanut butter cup but without the dairy, harsh ingredients and they have an extra kick of protein to make them the perfect choice when you’re craving a little something sweet but are focused on eating right.
Here’s a quick little outline on how to make these yummy bites:
Line a 9×9 baking dish with parchment paper and set aside.
Mix together your powdered peanut butter powder and water until fully combined and creamy but not watery. I think it’s easier to slowly add water in small spurts to make sure the mixture doesn’t get too watery. Add in maple syrup and mix and then add in almond flour and protein powder with a rubber spatula.
Transfer mixture to the prepared baking dish and spread evenly with spatula. I find that using my fingers is a bit easier with this part. Make sure the layer is smooth and even and place in freezer for 15-20 minutes.
While the peanut layer is setting, make the chocolate layer by microwaving chocolate chips and coconut oil in small spurts of 20 seconds until fully melted. It’s time to make another peanut butter mixture! Combine the peanut powder with water. Add to melted chocolate and let cool for about 5 minutes.
Remove the 9×9 baking dish with the peanut layer from the freezer. Pour chocolate/peanut layer over the top and spread evenly. This layer will be a lot more liquidy so much easier to evenly distribute over the frozen peanut layer. Just make sure its fully covered in an even layer.
Place back into the freezer and let fully set for about 30 minutes.
Chop into desired size pieces and store in the freezer. Once they are fully set and stored in the freezer, they only take a few moments to soften and they’re ready to enjoy!
Protein Peanut Butter Chocolate Bites
Ingredients
Peanut Layer
- 1 Cup Powdered Protein Peanut Butter
- 3/4 Cup Water add more if needed
- 1/2 Cup Maple Syrup
- 1 Cup Almond Flour
- 1/4 Cup Vanilla Protein Powder
Chocolate Layer
- 1/4 Cup Powdered Protein Peanut Butter
- 3 Tbsp Water add more if needed
- 1/2 Cup Dairy Free Chocolate Chips
- 1 Tbsp Coconut Oil
Instructions
- Line a 9×9 baking dish with parchment paper and set aside.
- Combine your peanut powder with 3/4 cup of water and slowly add more water if needed. Add in maple syrup first and then almond flour and protein powder with a spatula.
- Transfer to the prepared baking dish. Using a spatula or your hands, press peanut butter dough into a smooth and even layer.
- Place in freezer and set for 15-20 minutes.
- To make the chocolate layer, microwave chocolate chips and coconut oil in small spurts of about 20 seconds until melted.
- Combine your peanut butter powder and water until creamy but not watery and mix with melted chocolate and coconut oil. Let cool for 5 minutes.
- Remove baking dish with the peanut layer from the freezer and pour your chocolate mix on top. Using a small spatula, smooth chocolate layer so that the peanut layer is completely covered.
- Place in freezer for about 30 minutes until completely set.
- Slice into desired amount of squares. I like to chop mine into small squares to make them “snack size”. Store in freezer.
