Cinnamon Roll Banana Bread

Ingredients

Banana Bread

  • 1 Cup Granulated Sugar
  • 1 1/2 Cups Mashed Banana approx. 3 medium bananas
  • 1/2 Cup Coconut Oil refined, melted
  • 1/4 Cup Dairy Free Milk unsweetened
  • 1 Tsp Apple Cider Vinegar
  • 2 Cups All Purpose Flour
  • 1 Tsp Baking Soda
  • 1/2 Tsp Salt

Cinnamon Swirl

  • 1/4 Cup Mashed Banana
  • 1/4 Cup Brown Sugar
  • 1 Tbsp Cinnamon

Cinnamon Vanilla Glaze

  • 1/2 Cup Powdered Sugar
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Cinnamon
  • Almond Milk start with a small splash, add more if needed

Instructions

  • Preheat oven to 350. Grease a 9x5x2in loaf pan and set aside
  • In a medium size bowl, combine all ingredients for cinnamon swirl. Set aside.
  • In a large bowl, mash bananas with a fork or potato masher and add sugar, coconut oil and vanilla. Mix well. Stir in dairy free milk of your choice and apple cider vinegar.
  • Add flour, baking soda and salt and mix just until fully combined.
  • Divide batter in half. Fill your loaf pan with first half of batter. Pour half of cinnamon swirl batter on top and spread evenly with a spatula or swirl with a toothpick. Pour the other half of the banana bread batter on top of cinnamon swirl layer.
  • To finish, pour the last half of cinnamon swirl batter on top and spread evenly or swirl with a toothpick.
  • Bake for 60 - 70 minutes.
  • While loaf is cooling, mix together ingredients for the vanilla glaze.
  • Once the loaf is almost cooled completely, drizzle your desired amount of glaze over the top.
